Watched Gordon Ramsay’s make a sticky pudding with golden syrup on telly once, so I make my sticky pudding only with golden syrup, albeit with minor changes. When Gordon asks you to make something, he does it so intensely that you cannot think of making it any other way.
This one is wipe-the-plate-clean delicious.
Add 1 cup of pitted and chopped dates into a small bowl along with 1/2 tsp baking soda. Pour in 1 cup of boiling water. Let the dates soak in the soda mixture for 10 mins. Then lightly blend it (leave some chunks in) Set aside.
In a large bowl, whisk 50 gm butter with 6 tbs brown sugar. Add 1 tbs golden syrup, 1 egg and whisk. Then add 80 gms flour and 1/2 tsp baking powder and mix very well. Finally add the date mixture, 1/2 tsp vanilla paste/extract and whisk.
Grease and flour 6 ramekins. Pour the batter evenly into each. Bake for 15-20 minutes, until a toothpick inserted in the centre comes out clean.
For the toffee sauce – melt 1/2 cup butter in a sauce pan, add 1 cup brown sugar and 1 tbs golden syrup. Mix well in the pan. Add 1/2 cup of heavy cream and whisk again until the sauce thickens.
Allow the cakes to cool for 5 minutes before turning them over onto a plate or tray. Then pour the toffee sauce over each. Top with a scoop of vanilla ice cream and serve.
