Anyone can make this button porotta – its easy peasy, when compared to making the regular Kerala porotta. Even little kids can make this super tasty, colourful, button porotta quickly.
Firstly, take 2 cups plain flour in a large mixing bowl. To this, add 2 tbsp sunflower oil or 2 tbs ghee and 1 tsp sugar. Mix well until the flour turns moist. Add salt to taste, and mix well. Now add water slowly and knead to a smooth and soft dough. Brush 1/2 tbsp oil on it, cover and rest for half an hour.
After half an hour, punch and knead the dough again. The dough can be made into small balls and placed in a bowl. Gently roll each ball to the size of a mini disc. Rub little oil on top of each ball. Sprinkle some flour on it and sprinkle finely chopped coriander leaves on top. Place the next disc on top of it. Thus the six discs are stacked one on top of the other.
Spread oil, flour and coriander leaves between each disc. Roll out these stacked puris well. Spread a little oil on top of the floured dough. Cut into an inch wide strips using a sharp knife. You can get ten to twelve strips from a single roll of flour. Now roll each strips into a spiral. Gently roll out each one into a circle.
Place the rolled porotta on a hot griddle and make sure to grease the griddle well. Cook on medium flame until the base is cooked. Flip over and spread some oil. Cook on medium flame until both sides turn golden brown. Finally crush the porotta gently with your hands, this helps to separate the layers.
