Greek Fish and Vegetables

Try this amazing Greek baked fish and you will make it all the time! This easy, colourful meal is a very healthy dinner option. Delicious too!

Clean 1/2kg boneless fillets of fish (Cod, Haddock or Basa is best)

Mix salt, 3 tsp crushed black pepper corns, 2 tsp Greek/Mexican/Italian seasoning, 1 tsp chopped parsley, 2 tsp garlic powder or 5 cloves of minced garlic, juice of one lemon, 1tbs extra virgin olive oil and a little water.

Soak the fish fillets in this marinade for 30 minutes. (You may also add flour to this, dredge the fish in flour pan fry the fish)

Line a large baking dish with the fish fillets and pour the marinade over it. Make sure the fish fillets are well coated. Bake for 40 minutes. The fish should be soft, not rubbery. Garnish with fresh chopped parsley.

In another baking tray, put 3-4 potato halves, 5 cherry tomatoes and 2 courgettes cut up into chunks.

Toss in some black pepper powder, salt, drizzle some olive oil and sprinkle some water. Mix well. Bake.

Cut up some red and yellow bell peppers, a head of broccoli and some French beans and place on top of the roast potatoes (the potatoes are baked first because those require more time to cook. Bell peppers get soggy if overcooked. Broccoli too tastes best when crunchy) Give a quick toss. Bake.

The baked fish can be sliced and served hot with the vegetables and olives.
