Garlic Chicken

All that bad breath, but some of us cannot get enough of garlic. Like Monica Geller in FRIENDS, we love anything delicious comma garlicky.

Garlic Chicken surprisingly will go well with salads. Or Chinese noodles or rice. And you can easily impress your guests. This one isn’t  hard to cook up for a weekend meal.

For chicken stock: Boil or microwave 3 small pieces of chicken with bones in a tiny bowl for 10 minutes. Clear away the frothy scum that rises to the top.

Add a bay leaf, 1 chopped onion, 1 chopped green chilli, 1 inch piece of ginger and 1 tsp crushed black pepper. Cook for another 10 minutes and save just the stock water.

Marinate 500 gms chicken in 1 tbs crushed black pepper, 1 tbs ginger garlic paste and salt. Coat the pieces in flour and fry. Or grill the pieces on a pan for a healthier option.

To a pan, add 3 tbs butter. When it melts, add 2 tbs chopped garlic. Sauté well.

Add 1/2 cup chopped spring onions and 1 tsp crushed black pepper. Sauté. Add 1 tbs flour. Add 2 cups of the saved chicken stock. Mix well.

Add the fried/grilled chicken pieces. Add 1 tsp oregano or cilantro. Cook for 2 mins. Serve hot.
