Air fryer Honey Chilli Chicken

Cooking in an air fryer guarantees a crispy outside and succulent meat inside. Once you’ve tasted chicken air fried in this sweet and spicy marinade made of honey and spices, you’ll be making it every week.

Cut 500 gm chicken into large pieces.

Grind together 1.5 inch piece ginger, 8 cloves garlic, 1 green chilly, 1 small onion, 1 cup mint leaves, 1 cup cilantro, 1 tsp fennel, 2 tsp paprika powder, juice of 1 lemon and 1 tsp salt.

Marinate the chicken in this mixture for an hour. Place the chicken pieces on air fryer tray, leaving gaps.

Air fry one side of the chicken for 10 mins on 180 degrees.

Make the glaze: Mix together 2 tbs olive oil, 1/2 cup honey, 1 tbs chilli flakes, 4 tbs ketchup, 1 tsp soy sauce, juice of 1/2 lemon and 1/2 tsp salt.

Apply glaze on the crusty side of the chicken pieces using a brush.

Cook for 5 mins. Turn over. Apply glaze thickly. Cook for 10 mins, making sure the chicken pieces are coated well, but not burnt.

A firm family favourite, this is traditionally served with pita bread, but it is just as delicious with a simple crisp Mediterranean salad.
