A spicy and tasty fruit cake recipe – by popular demand. This one is packed with dried fruits, nuts and warm holidays spices that makes your kitchen smell like Christmas. But, minus the eggs – you will not miss them. A perfect Christmas treat for vegetarians or people with allergies.
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, whisk together 4 cups of flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 tsp salt.
In another bowl, combine 1 cup orange juice and 1 cup sugar. Add 1 cup melted butter and 2 tsp vanilla extract. Mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in 2 cups of mixed dried fruits (raisins, currants, cranberries, prunes, chopped dates) and 1 cup chopped almonds.
Pour the batter into the prepared cake pan.
Bake for 45 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
