Eggless Chocolate Brownies

A gooey, fudgey, slice of brownie, anyone? Brownies are definitely not for healthy eaters; snackers love em though.

If brownies stuffed with nuts is the way to your hungry heart, how do you make them taste even better? Stuff ’em with more nuts and chunks of dark chocolate. This recipe is for our friends who want a taste of this popular dessert, but don’t eat eggs.

Whisk together 3/4 cup thick set yoghurt, 1 cup granulated white sugar until the sugar dissolves. Add 1 tsp vanilla extract and whisk again.

Melt 50 gms of butter. Add 150 gms of dark chocolate broken to pieces. Whisk well until the chocolate melts.

Add the yoghurt mix to the chocolate mix and whisk well.

Add 1/2 cup of chopped cashew nuts. Into a large mixing bowl, sieve these together: 1/4 cup cocoa powder, 1 cup flour and 1/2 tsp salt.

Pour the cocoa mixture into the flour mixture and whisk until blended, but do not over-mix.

Pour into a baking tray lined with parchment paper. Gently push tiny chunks of dark chocolate evenly into the batter in the tray.

Bake for 25 minutes until the top is crackly. Serve warm with a scoop of vanilla ice cream.

Or after cooled, pour chocolate syrup on top, dust with cocoa powder and serve.
