Cheese toast is our versatile, quick, and comforting dish – featuring toasted bread topped with melted cheese – this one adds mushrooms to add to the flavour.
It can commonly be enjoyed as a breakfast, snack, or light meal.
On a baking sheet, toss 2 cups of sliced mushrooms and 2 small onions in 2 tbs olive oil. Sprinkle with a few pinches of salt and pepper. Bake in the oven for about 20 minutes, or until roasted to your preference.
Set aside 2 cups shredded gouda/cheddar/mozzarella cheese.
In a skillet on the stovetop, melt 2 tablespoons butter over medium heat. Toast 8 slices of thick bread.
Top each slice with shredded cheese, roasted mushrooms and onions and then add more cheese. Layering this way ensures that the melty cheese will hold the sandwich together.
Top with chopped parsley, fresh basil or cilantro.
