Brown Butter Coffee Cookies

Wanna have your coffee and eat it too? And if you haven’t browned your butter ever, try it – just to enjoy one of the richest flavours ever.

For those of us who go coffee-hunting each time we step into a home, this recipe is a perfect buttery mocha treat. Coffee lovers, rejoice!

Brown 1.5 cup butter over medium heat, stirring constantly until the butter begins to foam and turns a golden brown. Switch off the flame and keep stirring, until the butter emits a nutty aroma. DONT let it burn. Allow it to cool a bit.

Whisk together – 4 eggs, 1.5 cups brown sugar, 3 tsp vanilla extract, 2 tsp instant coffee powder and 1/2 cup white sugar. Add to the butter and mix well.

Sift together – 4 cups flour, 1 tsp salt and 1 tsp baking soda.

Mix the dry ingredients into the wet until everything comes together. Fold in 1/2 cups of chocolate chips. Do not over mix.

Refrigerate the cookie dough overnight.

Next day, scoop the dough into balls on a baking tray lined with parchment paper, 2 inches apart.

Bake for 15 mins until the edges begin to brown.

Cool and enjoy.
