This one is the classic Southern recipe for fried chicken that is crunchy and crusty on the outside and tender and flavourful on the inside; it is infused with seasonings and soaked in buttermilk, to amp up the flavour.

You cannot easily get hold of SFC mix all over the world and seasoning you buy may not be all that healthy. So, you better cook up one of your own.
Cut up 1kg chicken into large pieces. Soak it in 3 cups of buttermilk for two hours. Drain.
In a bowl, mix 2 cups flour with 1 tsp white pepper powder, 1 tsp black pepper powder, 1 tsp garlic powder, 1 tsp red onion powder, 1 tsp thyme, 1 tsp basil, 1 tsp oregano, 2 tsp parsley and salt (or celery salt if you have it).
Toss the chicken pieces well in this flour mixture until each piece is coated well.
Deep fry and drain on paper towels.
Serve with roast potatoes and a green salad.
